During the holiday season, we’re bombarded with all sorts of sweet treats (though they’re wonderful!) For some, the Christmas season is the only time during the year they will splurge and take advantage of enjoying these treats. The rest of the year, they’ll eat sugar in moderation. I admire people who do this, since for many of us, sweets are our favorites….present company included!
If you’d like to try reducing the amount of sugar you have during the Christmas season, I have a recipe that will help with that. This recipe, “No-Sugar Apple Pie”, uses no sugar, but gets its sweetness from a can of frozen apple juice concentrate. This is a clever and innovative way to sweeten a dessert!
It’s prepared rather simply. The apple juice concentrate is placed in a saucepan and heated to boiling. You combine soft butter, cornstarch and some spices and temper this mixture with some of the hot juice concentrate. This is combined with the hot juice concentrate in the saucepan and combined until it’s slightly thickened. This mixture is now combined with your prepared apples and placed in a pie shell. The top crust goes over the top and it’s now baked. This pie has two baking times: 425 degrees for 30 minutes and 375 degrees for 30 minutes more. It’s now ready to be sliced and served with a slice of sharp Cheddar cheese or some ice cream on the side.
For the apples in this recipe, it’s best to use any variety that’s good for baking would work well. Some to consider are the Macintosh, Granny Smith, or Rome varieties. Not just any variety will cook well. I’ve made apple pies with the Red Delicious apples and they produce a pie that’s watery and tasteless. Choose a good variety for baking and you’ll come out on top!

NO-SUGAR APPLE PIE
- 1 (6 oz.) can frozen apple juice concentrate, thawed
- 1 teaspoon butter (teaspoon is correct)
- 2 teaspoons cornstarch
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 6 cups peeled and sliced baking apples
- pastry for a 2-crust pie
Place apple juice concentrate in a saucepan and bring to boiling. In a small bowl, combine butter, cornstarch, cinnamon and nutmeg. Add a small amount of the hot concentrate to this mixture and stir until well blended. Stir the cornstarch mixture into the boiling apple concentrate and stir until well combined and thickens slightly. Combine with the prepared apples and mix until apples are well coated. Place in a pie pan lined with pastry. Place top crust over apples. Bake at 425 degrees for 30 minutes. Cool oven to 375 degrees and bake for 30 more minutes. Serve warm plain, with cheese or ice cream. Yield: 6-8 servings.
