Here is another version of Caramel Apple Pound Cake. This recipe comes from my aunt’s collection, but it is every bit as good as my recipe.
Caramel Apple Pound Cake
- 1 1/3 cups granulated sugar
- 2 sticks butter
- 2 teaspoons vanilla
- 3 large eggs
- 3 egg yolks
- 1 tsp. vanilla
- 2 tsp. brandy
- 1 1/2 c. cake flour
- 1/2 teaspoon apple pie spice * Make your own Apple Pie Spice
- 1/2 teaspoon salt
- 1 medium apple like Granny Smith peeled, cored and thinly sliced into wedges
- 1/4 cup water
- 1 c. sugar
- 3/4 c. cream or half and half
- 1/4 tsp. salt
Directions for making Caramel Apple Pound Cake
Preheat oven to 325° Fahrenheit. Butter or spray a 9 x 5-inch loaf pan. Line the bottom of the pan with parchment paper so the cake comes out easily.
Cream sugar and butter together until light and fluffy. Add the eggs and yolks, one at a time, beating well after each. Add the vanilla and brandy and mix well.
Combine cake flour, salt and apple pie spice in a separate bowl.
With the mixer on low, or stir speed, add the dry ingredients stirring until just combined. Do not overmix, or it will make the cake tough.
Pour about a fourth of the cake batter into the loaf pan and smooth it out with a spatula. Place a layer of apples over the top. Apple slices should overlap each other and cover the bottom so every bite had a taste of apple. Pour the remaining cake batter over the apple slices. Smooth the top of the cake with a spatula.
Bake for 70-75 minutes, or until a toothpick inserted comes out clean. Let the cake cool in pan for about 5 minutes, and then invert onto a cooling rack. While you wait for the cake to cool, make the Caramel Glaze.
In a medium saucepan, add the sugar and water. Turn the heat to medium-high. Cook and stir until the sugar mixture comes to a boil. Turn the heat down to low. Continue cooking until it turns a dark amber color. It is important that you stand by the stove and watch closely, because this mixture can easily burn.
Carefully, add the half and half or cream to the pan. Use caution, because the mixture will splatter. Stir with a wooden spoon or whisk until the caramel sauce is smooth. Add the salt. Continue to cook and stir the caramel until is the desired thickness. This can take between 5 and 10 minutes. Remove from heat. Spoon glaze all over the cake just before serving.
Apple Pie Spice
- 1/4 cup ground cinnamon
- 1 tbsp ground allspice
- 2 tsp ground nutmeg
- 2 tsp ground ginger
- 1/2 tsp ground cardamom (optional)
Combine the ingredients and mix thoroughly. Store your Apple Pie Spice in an airtight container. Use as you would if it were bought from the store. You can add more or less of the ingredients to make taste the way you like best.
