We’re now officially into the fall season! I’ve noticed throughout the Carolinas that the leaves are certainly beginning to change color and from what I’ve heard, this is to be a great season for seeing the fall colors in the North Carolina mountains. The pumpkins are showing up in the stores, the focus is on Halloween and the mornings are crisp and cool. So, fall has definitely fallen!
It’s also the time of year where a lot of baking begins. I’ve seen baking displays in stores and I’ve already seen candied fruit to entice bakers to make a fruitcake and to let it age for the Christmas season. And you’ll start seeing apples becoming more abundant. Fall is the best time to find apples and turn them into many types of sweet treats. The recipe I have for you today, however, doesn’t use fresh apples, but apple butter instead. If you enjoy this sweet and spicy condiment on your morning toast, then you’ll enjoy “Sour Cream Apple Cake.”
This cake is pretty unusual, since this cake uses apple butter rather than fresh apples. There are several good brands of apple butter in the grocery stores, so you can choose the brand you would like to use. If you’re particularly industrial and make your own, by all means use that. This cake makes a 9 inch square cake, which is fine if you have a small family and don’t want to have a big cake. The sour cream in it makes the cake especially moist and tasty, along with the warm, fall spices we use in our baking this time of year.
While the cake doesn’t have an icing on it, you could ice this cake with a cream cheese or caramel icing. If you wanted to, you could simply dust powdered sugar over the top and not be concerned with icing it at all. You’ll notice that this cake only uses 1/3 cup of butter. That’s not a lot of butter for a cake, but this is all you’ll need to produce a cake that’s very flavorful. And you can’t beat the flavor of butter in a cake!

SOUR CREAM APPLE CAKE
•1/3 cup butter, softened
•1 cup sugar
•2-1/4 cups all-purpose flour
•1-1/2 teaspoons baking soda
•1/2 teaspoon salt
•1 teaspoon ground cinnamon
•1/2 teaspoon nutmeg
•1/4 teaspoon cloves
•1 cup sour cream
•1 cup apple butter
Cream the butter and gradually add the sugar. Cream until fluffy. Add eggs, one at a time, beating well as they are added. Combine the flour, baking soda, salt and spices in another bowl and add alternately with the sour cream, beginning and ending with the dry ingredients. Fold in the apple butter. Turn into a greased and floured 9 inch cake pan. Bake at 350 degrees for about 40-45 minutes or until cake tests done. Cool in the pan on wire rack. Yield: about 9 servings.
