One of my favorite candies is the Hershey Bar with almonds. This creamy, crunchy treat is a favorite among many, as many fans of chocolate can attest! It’s been said in recent years that chocolate is actually good for us, especially the dark chocolate, since it provides antioxidants for good health. It’s also been said that almonds are good for our circulatory system. It’s rare that a candy can claim these health benefits, so it give us a good reason to enjoy this candy!
Let’s make a chocolate treat that uses this popular candy and turn it into a “Chocolate Almond Pie”. This is a lusciously creamy dessert that has a crust of Oreo cookies, filled with a wonderful chocolate-almond filling and topped with whipped cream. It’s absolutely divine! Not a difficult dessert to make, it gets lots of chocolate flavor from the chocolate-almond candy, baking chocolate and cocoa. So, you can see that anyone who loves chocolate would really indulge in this pie!
In making the crust using the Oreos, you can do this two ways: one way is to place the cookies in a Ziploc bag and crush them with a rolling pin to form crumbs. You can also do this in the food processor using the steel blade. If using the food processor, I suggest breaking the cookies before placing them in the processor’s work bowl to make it easier for the processor to do its work. I’ve tried grinding the cookies whole, but I’ve found that it doesn’t grind them evenly, so to insure evenly ground crumbs, I would break them before processing them.
In making the whipped cream for the filling, make certain that the bowl and beaters used in whipping are cold. I place those in the refrigerator well ahead of making the pie to make sure they’re very cold when I’m ready to work with the cream. If you’re short on time, you could place them in the freezer. Also, when whipping the cream, use care in not to overwhip the cream, as this would turn the cream to butter, which you don’t want to do!

15 Oreo cookies
1/4 cup melted butter
Crush the cookies to form crumbs and mix with the butter. Press into a 10-inch pie plate and chill.
3/4 cup milk
2-1/2 cups miniature marshmallows
1 (8 oz.) bar chocolate-almond candy, such as Hershey’s, broken in pieces
2 squares unsweetened chocolate
2 tablespoons cocoa
2 cups whipping cream, whipped with 1/4 cup sugar
grated chocolate and/or crushed almonds for garnishing OR additional crushed Oreo cookies(optional)
In a saucepan, combine milk, marshmallows, chocolate-almond candy and unsweetened chocolate. Heat over low heat until chocolate completely melts. Stir in the cocoa until dissolved. Chill until completely cool. Fold in 2 cups of the whipped cream and turn into prepared pie crust. Spread remaining whipped cream over the top of pie. Decorate with grated chocolate and/or crushed almonds or crushed Oreo cookies. Yield: 8 servings.
