Fall is here and though it isn’t cool and crisp yet, it will be soon. It’s time to pull out the slow cooker and soup family favorites. Soups can cook and marinate all day. Just be sure that soup is always served hot and steamy and not room temperature. The longer the ingredients marinate together, the better tasting the flavor of the soup. Broccoli cheese soup homemade is delicious and packs a wallop of nutrients from the broccoli for the kids as well as adults. Serve this soup with artisan bread and butter. Directions and Ingredients:
In a extra large soup pot steam 24 – 36 ounces of fresh frozen broccoli. The more broccoli used, the thicker the soup. Once the broccoli is slightly tender, not mushy, drain the water, reduce the temperature to low, and drizzle with good olive oil. Add in one large, chopped yellow onion. Season with sea salt and pepper. Toss in a teaspoon of minced garlic and stir well.
Add eight cups of water to the broccoli. Next add 4 teaspoons of Better than Bouillon vegetable soup base stirring until a broth is formed. Heat and stir ingredients until a low boil. Add 1/2 cup of heavy cream and cover soup with a lid. Allow to simmer for a half-hour stirring frequently. Taste soup to be sure it is seasoned appropriately. For a little kick add a tablespoon of crushed red chili pepper flakes.
Turn off heat and let soup cool for 5 to 10 minutes. In a blender puree the soup in small batches being very careful not to burn oneself with the hot soup. Heat expands so remember to hold the lid of the blender down firmly while soup is in the blender. Pour each pureed batch of soup back into the soup pot until the soup is completely smooth.
Add in 1 12 ounce package of Sharp Cheddar Cheese. Bring soup back to a boil stirring frequently. Once the soup is back to a boil, turn off the heat, keep the soup covered, and let cool to a serving temperature for 10 minutes.
Ideas for toppings include: real bacon pieces, red chili flakes, ground black pepper, extra shredded cheddar, chives, chopped green onions, or a few sprinkles of Gorgonzola cheese.
