With the Fourth of July coming up at the end of the week, I have a great, easy and patriotic recipe. Before making this recipe, I hadn’t had fruit pizza in ages. I think the last time I had it was in the 90s. When I saw this recipe on Pinterest, I immediately pinned it for the future. Sugar cookies, fruit and cream cheese frosting sounded like a winning combination. I initially made this for a baby shower a few weeks ago, and it was the perfect, light dessert for the ladies. After making it, I realized this would be perfect for July 4 because of the red, white and blue color!
This recipe is so easy to make because it starts with a refrigerated sugar cookie dough that you simply bake. Then, all you need to do is make a quick cream cheese frosting and top with some fresh fruit. The end result is perfectly sweet and refreshing, but not too heavy so it is the perfect summer dessert. This recipe is also very versatile because you can top with any of your favorite fruit. I used strawberries, blueberries and raspberries but you could easily add mango, kiwi or any other fruit.
Fruit Pizza (recipe adapted from Skinnytaste)
1 roll refrigerated sugar cookie dough
1 8 oz package reduced fat cream cheese (softened)
1/2 cup powdered sugar
1 tsp vanilla
1 cup sliced strawberries
1 cup blueberries
1 cup raspberries
Preheat oven to 350º. Lightly spray a 9 x 13″ pan with cooking spray. Roll out cookie dough and press into the pan. Bake for 16-20 minutes and cool completely.
Beat together softened cream cheese, vanilla and powdered sugar. Spread on top of the cooled cookie crust.
Cut the bars into 15 large squares (5 cuts by 3 cuts with the knife). Then cut each square in half diagonally to create triangles. Layer the fresh fruit over the frosting. Store in the refrigerator until ready to serve.
