I had the pleasure of meeting Cordey Lash last week at an event that celebrated ten years of an organization we are both mega supporters for. We immediately clicked as I knew there was something special about this young man. Turns out, he was on the television show, ‘Food Court Wars,’ and was about to open up Ophelia’s New Soul at Collin Creek Mall. Cordey was such a humble, gracious soul that radiated positive energy throughout the room. Cordey invited me to attend The Plano Chamber of Commerce Ribbon Cutting for his new restaurant the next morning. I’m already an active member of Chamber, so why wouldn’t I support a new friend?
I was asked to arrive during VIP arrival, which was at 10:30 AM. The DJ was setting up, a few people I recognized from Chamber were socializing amongst each other and the photographer was snapping pictures as people matriculated towards Ophelia’s New Soul. Cordey & his partner, Malcolm Gage, welcomed each person that came in and thanked them for attending their grand opening; you could see on their faces how excited they were to finally fulfill their dreams and share their passion with the community.
The food was absolutely incredible. Their spin on chicken & waffles was mind blowing, each bite inhaled was delicious, daring & quite tasty. All of the menu items I tasted during the ribbon cutting event were brave, mouth watering and detailed to perfection. From the presentation of the food to the unique taste from each bite, these young gentlemen have opened something very special in Plano, Texas. I wouldn’t be surprised if they expanded all over the southern part of The United States.
Malcolm Gage and Cordey Lash have always had a common passion for preparing, sharing, and indulging in traditional soul food. With a uniquely contemporary and health-conscious approach to southern cuisine, Gage and Lash are anxious to share their culinary prowess with the world.
The pair began by sharing their cutting-edge twist on Lash’s traditional family recipes with friends and family. However, with an overwhelmingly positive response, the two decided to combine their skills and passion into a business plan. They created a brand name that is centered in traditional comfort food that has been prepared and shared by strong women from generation to generation. It is the modern interpretation of southern cuisine that has given a unique character to Ophelia’s New Soul, making it unlike any other culinary experience in the area.
In February 2014, Lash and Gage were given the opportunity to compete on Food Network’s Food Court Wars. The friends competed against a mother and daughter duo, offering up-scale salads under the brand name Ms. Ney’s Gourmet. Ophelia’s New Soul wowed the judges with their Fierce Mac & Cheese, Tut’s Tasty Braised Collards, and Tasty Turkey Meatballs doused in specialty BBQ sauce. Lash and Gage won a location in the Collin Creek Mall Food Court, with a year of complimentary rent.
Lash and Gage, conceptualized their cuisine to honor the strong women in their lives. They are committed to bringing the soulful cuisine their families have enjoyed for generations into the modern culinary community.
