Peanuts and peanut butter have been long popular among people for decades. Peanut butter is a mainstay in many American homes and when spread with jelly, is the most popular sandwich packed in a lunchbox. Peanut butter cookies never fail to please, especially when served with cold milk. Peanuts and peanut products are also packed full of protein and even someone who has to be careful with their cholesterol can enjoy a reasonable serving of peanut butter, since the fat in peanuts is of the vegetable type.
I’ve come across a new and different type of peanut butter snack that would be something that a young person who’s out of school for the summer can make. It’s especially easy since there’s no baking, which makes this recipe even more kid-friendly! This recipe is for “Crispy Peanut Squares”. This uses both peanuts and peanut butter, so if you like these foods, you’ll become a fan of these treats in short order!
This begins with combining sugar, corn syrup and peanut butter in a microwave-safe bowl. This gets microwaved until everything is melted and hot. You add vanilla, rice cereal squares and peanuts. This gets combined and this is pressed into a 9×13 inch pan. It now is covered and refrigerated for 1 hour or until set. Cut into squares and be ready to devour them! These are both crispy and chewy, not to mention very good!
These are best served chilled, but they can be served at room temperature, if desired. If you have a 9×13 inch pan with a top, storing these is a cinch. If you’d prefer, they can be cut after chilling and removed to a covered container. Again, chilling is optional, though it’s my preference since I believe this helps them to hold together better.

If you need a snack in a short amount of time and a youngster in your home would like to do some cooking, this recipe will be perfect on both counts….especially if you’re a peanut butter fan!
CRISPY PEANUT SQUARES
- 1 cup sugar
- 1 cup light corn syrup, such as Karo
- 1 cup creamy peanut butter
- 1 teaspoon vanilla extract
- 6 cups crisp rice cereal squares, such as Rice Chex
- 1 cup dry roasted peanuts
Combine the sugar, corn syrup and peanut butter in a large microwave-safe bowl. Heat on high power for 3 to 4 minutes, stirring once, until melted. Stir in the vanilla. Fold in the cereal and peanuts and stir until well combined. Spread the mixture into a lightly greased 9×13 inch pan. Press the mixture lightly with the back of a wooden spoon or spatula to make certain it’s firmly packed. Cover and chill for 1 hour or until set. Cut into squares. Yield: about 30 squares.
