As busy as many of us are, it pays to save time whenever and wherever we can. We can do that in the kitchen, as well. It’s always to our advantage to be able to bake more than one dish in the oven at the same time. It not only saves time, but saves energy, therefore, saving you money. With the cost of everything going up, that’s a plus right there!
Pork chops are a favorite meat and have been for years. They are often on sale in the grocery store, so it pays to catch them when they’re offered at a reduced price. The recipe I’m giving you today is one that uses pork chops and enables you to bake them along with a side dish using potatoes. This is how “Chops and Cheesy Potatoes” work. The pork chops bake in the same dish along with the potatoes.
The recipe begins with the preparation of the potatoes, since of course they’ll take longer to bake. These potatoes are baked with a sour cream and cheese sauce, which is conveniently made with cheddar cheese soup. While the potatoes bake, you can be browning the pork chops. The chops are placed on top of the potatoes and baked further. The final step is to top with green pepper rings and spiced apples and another 20 minutes of baking. The end result is a main course, along with a side dish, that is not only eye-appealing, but is very tasty and even special enough for company. A green salad and hot bread would round out the meal.
The spiced apple rings called for in the recipe should be available in the grocery store in or around where the pickles are sold. Years ago, when I first prepared this recipe, I was told that the apple rings were only available around Thanksgiving and Christmas, meaning it was a seasonal item. Nowadays, they should be easily available throughout the year. Of course, if you don’t see them in the store, make certain you mention it to the store manager and they’re usually very eager to please their customers by ordering special request items. If you unable to get them, spiced peaches would be a good substitute or canned pineapple rings would also work very well.

CHOPS & CHEESY POTATOES
1 can cheddar cheese soup
1/2 cup sour cream
1/4 cup water
3 tablespoons chopped parsley
4 cups thinly sliced potatoes
salt and pepper
2 medium onions, thinly sliced
3/4 cup chopped green pepper
6 pork chops, 3/4 inch thick
1/4 cup all-purpose flour
2 tablespoons vegetable oil
6 green pepper rings, 1/2 inch thick
6 canned spiced apple rings
Combine soup, sour cream, water and parsley. In a 9×13 inch shallow casserole dish, alternate layers of potatoes sprinkled with salt and pepper, onions, chopped pepper and the soup mixture. Bake, uncovered, at 375 degrees for 30 minutes. Dust pork chops with flour and saute in the oil until browned. Stir potatoes in the casserole dish and place chops on top. Cover and return to the oven for 1 hour. Top with the pepper rings and apples. Bake for an additional 20 minutes. Yield: 6 servings.
